{"id":588,"date":"2014-07-27T13:20:32","date_gmt":"2014-07-27T18:20:32","guid":{"rendered":"http:\/\/pcandres.com\/?p=588"},"modified":"2015-11-06T15:11:28","modified_gmt":"2015-11-06T21:11:28","slug":"thanksgiving-in-july-roasted-root-vegetable-soup","status":"publish","type":"post","link":"https:\/\/thesoupblog.com\/?p=588","title":{"rendered":"Thanksgiving in July:  Roasted Root Vegetable Soup"},"content":{"rendered":"<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none\"><iframe src=\"http:\/\/www.facebook.com\/plugins\/like.php?href=https%3A%2F%2Fthesoupblog.com%2F%3Fp%3D588&amp;layout=button_count&amp;show_faces=true&amp;action=like&amp;font=arial&amp;colorscheme=light&amp;width=450&amp;height=30\" scrolling=\"no\" frameborder=\"0\" allowTransparency=\"true\" style=\"border:none; overflow:hidden; width: 450px; height: 30px;\"><\/iframe><\/div><div id=\"attachment_589\" style=\"width: 396px\" class=\"wp-caption alignright\"><a href=\"https:\/\/thesoupblog.com\/wp-content\/uploads\/2010\/07\/Root-Veg-Hat.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-589\" class=\"wp-image-589\" title=\"Root Veg Hat\" src=\"https:\/\/thesoupblog.com\/wp-content\/uploads\/2010\/07\/Root-Veg-Hat-300x237.jpg\" alt=\"\" width=\"386\" height=\"305\" srcset=\"https:\/\/thesoupblog.com\/wp-content\/uploads\/2010\/07\/Root-Veg-Hat-300x237.jpg 300w, https:\/\/thesoupblog.com\/wp-content\/uploads\/2010\/07\/Root-Veg-Hat.jpg 521w\" sizes=\"auto, (max-width: 386px) 100vw, 386px\" \/><\/a><p id=\"caption-attachment-589\" class=\"wp-caption-text\">Unbuckle your hat and stay a while.<\/p><\/div>\n<p>You know summer is finally here when you start thinking about how many days are left before it\u2019s gone.<\/p>\n<p>Or is that just me?<\/p>\n<p>It&#8217;s not that I&#8217;m a pessimist.\u00a0 I just look ahead to what\u2019s next rather than fully enjoying the moment.<\/p>\n<p>Sundays are the perfect example.\u00a0 Although Sunday is considered a weekend day, because it&#8217;s also the day before the next school\/working week, it &#8216;s not a full day off.<\/p>\n<p>I\u2019m the same way with summer.<\/p>\n<p>Call it a design flaw (Thanks Mom and Dad!), call it practical, call it what you will, that\u2019s where the story of this week\u2019s soup begins.<\/p>\n<p>Since we still haven\u2019t gotten our vegetable garden up and running\u2014the basil\u2019s still pretty small, the tomatoes are going nowhere, and, well, that\u2019s about it\u2014I\u2019m forced to take my inspiration from the supermarket.\u00a0 The vegetable that caught my eye this week was the parsnip.<\/p>\n<p>The parsnip, the carrot\u2019s pale, sharp-tongued cousin, is really more of a fall vegetable.\u00a0 They\u2019re available during the summer too, obviously, but the fall is when most of the other produce disappears for the winter and leaves behind the lonely root vegetables: parsnips, carrots, onions, etc.\u00a0 So come Thanksgiving, that\u2019s what I serve: roasted root vegetables.<\/p>\n<p>As you\u2019ve no doubt come to expect, thinking about this fall dish led to inescapable question: Is there a soup here?<\/p>\n<p>In November, I go all out with the root vegetables\u2014carrots, parsnips, onions, beets, turnips, rutabagas, garlic\u2014the whole cornucopia.\u00a0 For the soup I stuck with carrots, parsnips and onions all tossed together with a little seasoning, olive oil and dried rosemary.<\/p>\n<p>The key to getting the right taste is the roasting.\u00a0 I tossed all the ingredients together with the salt, pepper, oil and rosemary then spread the mix across several baking sheets so they would get that sweet crispy baking with flavor.\u00a0 This meant I had to use a lot of pans because I don\u2019t want to steam the vegetables and make them into indistinct mush.\u00a0 Yes, you\u2019re just going to put it all together in a soup at the end but you\u2019ll lose a lot of flavor if you don\u2019t roast the vegetables properly, which would be sad.<\/p>\n<p>And who wants to be sad in the middle of summer? Or fall, winter or spring for that matter?<\/p>\n<p>Be grateful instead.<\/p>\n<p>The larder is full.\u00a0 There\u2019s lots of fresh food available.\u00a0 It\u2019s nice out.\u00a0 By November, most of this will be gone.<\/p>\n<p>Not that I won\u2019t be grateful then too.\u00a0 November\u2019s almost navel orange season.\u00a0 But why wait?<\/p>\n<p>There\u2019s always something to be thankful for.\u00a0 Even Sundays.<\/p>\n<p><em>Note:\u00a0 Go easy on the salt and pepper in this recipe.\u00a0 I went a little overboard this week and left a bad taste in the mouths of our houseguests. They were senior bloggers and webfolks Laurie Niles (<\/em><a href=\"http:\/\/www.violinist.com\/\"><em>violinist.com<\/em><\/a><em>) and Robert Niles (<\/em><a href=\"http:\/\/www.themeparkinsider.com\/\"><em>themeparkinsider.com<\/em><\/a><em>) and they both taught me a lot although it might not be evident just yet.<\/em><br \/>\n<strong>Roasted Root Vegetable Soup<br \/>\n<\/strong>(serves 6-8)<br \/>\n1 lb carrots, peeled and shredded<br \/>\n1 lb parsnips, peeled and shredded<br \/>\n1 lb onions, peeled and shredded<br \/>\n1 T rosemary<br \/>\n1-2 T olive oil<br \/>\n6-8 cups chicken or vegetable stock<br \/>\nSalt &amp; pepper to taste<\/p>\n<ol>\n<li>Preheat oven to 350 \u00b0F.<\/li>\n<li>Toss vegetables, rosemary and olive oil together and spread out onto as many baking sheets as necessary to keep from crowding then place pans into oven for 20-30 minutes.<\/li>\n<li>Scrape roasted vegetables into a pot with the stock, 6 cups for a thicker soup\/8 for a thinner\/7 just right, season lightly, bring to a boil, reduce to a simmer for 30-45 minutes.<\/li>\n<li>When I finished this soup, I pureed it with an immersion blender but that was only because some of the vegetables got a bit too much color (i.e. they burned) and I didn\u2019t want that color mucking up the soup.\u00a0 If you\u2019re roasted roots haven\u2019t been blackened, pureeing isn\u2019t necessary.<\/li>\n<li>Serve warm with grilled meat and\/or a nice summer pasta.<\/li>\n<\/ol>\n<p><em>Image Credit: Photo of Root Vegetables and the buckled Pilgrim hat clich\u00e9 by the author.<br \/>\n<\/em><\/p>\n<p><strong>What foods are you grateful for?\u00a0 Do you eat them in summer, fall, winter or spring?
