{"id":650,"date":"2014-09-03T14:36:44","date_gmt":"2014-09-03T19:36:44","guid":{"rendered":"http:\/\/pcandres.com\/?p=650"},"modified":"2015-11-06T15:04:18","modified_gmt":"2015-11-06T21:04:18","slug":"think-globally-eat-low-cal-ly-celery-soup-2","status":"publish","type":"post","link":"https:\/\/thesoupblog.com\/?p=650","title":{"rendered":"Think Globally, Eat Low-cal-ly: Celery Soup"},"content":{"rendered":"<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none\"><iframe src=\"http:\/\/www.facebook.com\/plugins\/like.php?href=https%3A%2F%2Fthesoupblog.com%2F%3Fp%3D650&amp;layout=button_count&amp;show_faces=true&amp;action=like&amp;font=arial&amp;colorscheme=light&amp;width=450&amp;height=30\" scrolling=\"no\" frameborder=\"0\" allowTransparency=\"true\" style=\"border:none; overflow:hidden; width: 450px; height: 30px;\"><\/iframe><\/div><div id=\"attachment_700\" style=\"width: 260px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/thesoupblog.com\/wp-content\/uploads\/2010\/09\/Celery-Scale1.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-700\" class=\"wp-image-700\" src=\"https:\/\/thesoupblog.com\/wp-content\/uploads\/2010\/09\/Celery-Scale1-196x300.jpg\" alt=\"Taking Stalk\" width=\"250\" height=\"383\" srcset=\"https:\/\/thesoupblog.com\/wp-content\/uploads\/2010\/09\/Celery-Scale1-196x300.jpg 196w, https:\/\/thesoupblog.com\/wp-content\/uploads\/2010\/09\/Celery-Scale1-98x150.jpg 98w, https:\/\/thesoupblog.com\/wp-content\/uploads\/2010\/09\/Celery-Scale1.jpg 315w\" sizes=\"auto, (max-width: 250px) 100vw, 250px\" \/><\/a><p id=\"caption-attachment-700\" class=\"wp-caption-text\">Taking Stalk<\/p><\/div>\n<p>When I was a kid, my mother got me to eat celery by slathering a layer of peanut butter across the top.\u00a0 When I learned to cook, I discovered that celery was part of the holy trinity of veggies that make up <em>mirepoix <\/em>(onions and carrots being the other two), the base for a lot of classical soups and sauces.\u00a0 When I became a parent, I found out it was also good for smallish pets.<\/p>\n<p>Celery.\u00a0 Moms love it.\u00a0 The French love it.\u00a0 Guinea pigs too!<\/p>\n<p>And it doesn\u2019t stop there.<\/p>\n<p>This long stringy vegetable is all over the appetizer table.\u00a0 Typically found circling a bowl of dip (low-cal or otherwise) in the company of sliced carrots, cucumbers and the occasional more exotic vegetables (What? broccoli, bell peppers?!), celery is among the most popular crudit\u00e9s.\u00a0 Sliced celery stalks also play a part in many salads, the most famous being the Waldorf with its mix of apples, walnuts and you know what.<\/p>\n<p>What each of these dishes have in common is that they\u2019re all healthy.\u00a0 Something my children clearly have no interest in as they hardly touch their PB &amp; C anymore.\u00a0 It\u2019s of great interest to me, though, since I\u2019ve put on a number of pounds since summer began.\u00a0 Not that I\u2019m looking forward to the next swimsuit season before this one even ends.\u00a0 That would be too pathetic.\u00a0 I just want to get back to eating right again.\u00a0 And exercising.\u00a0 I want to start doing that again too.<\/p>\n<p>Celery is, you see, a great diet food.\u00a0 It has lots of fiber, a great crunch, and a nice mild taste, especially when you cook it.\u00a0 What it doesn\u2019t have is a lot of calories.<\/p>\n<p>Sadly, being a healthy food is not usually a real rallying cry to the table.\u00a0 Unless you make it into something delicious.<\/p>\n<p>Happily, I can report that this week\u2019s soup tastes really good.\u00a0 It\u2019s light and flavorful and a perfect choice for these final sweltering days of summer.<\/p>\n<p>There\u2019s nothing to it, either.\u00a0 You just slice the celery, toss it into a pot with the onion, stock and seasonings, set it to simmer, and you\u2019re pretty much done.\u00a0 No saut\u00e9ing, no roasting, no pureeing, no nothing.\u00a0 And that\u2019s not such a bad thing.\u00a0 With the mercury still up in the high 80\u2019s\/low 90\u2019s and the humidity continuing to add its own special comforts, the last place you want to be hunched over is a hot stove.<\/p>\n<p>Wouldn\u2019t you rather get outside and enjoy the last few moments of summer?<\/p>\n<p>This soup lets you.<\/p>\n<p>Don\u2019t wait another minute.\u00a0 The calendar has already turned its back on August. The kids are back in school.\u00a0 The pool closes for the season after this last, long weekend.<\/p>\n<p>There\u2019ll be time enough to play inside in the fall and winter.\u00a0 The rowing machine will still be there&#8230;<\/p>\n<p>in the basement&#8230;<\/p>\n<p>with the guinea pigs.<\/p>\n<p><strong>Celery Soup<br \/>\n<\/strong>(serves 8-12)<br \/>\n1 \u00bd lbs, celery, sliced thin<br \/>\n\u00bd cup onion, sliced<br \/>\n6 cups vegetable stock<br \/>\n1 T tarragon, dried (sorry)<br \/>\nSalt &amp; pepper, to taste<\/p>\n<ol>\n<li>Clean and slice celery stalks.<\/li>\n<li>Place celery, onion, stock, tarragon, salt and pepper into a pot.\u00a0 Bring to a boil and reduce to a simmer for 20-30 minutes.<\/li>\n<li>What? \u00a0You\u2019d rather there were more to do?\u00a0 Serve it already.\u00a0 Warm.<\/li>\n<\/ol>\n<p><em>Image Credit: Celery on a scale.\u00a0 Pretty funny, huh?
