I\u2019m even having a hard time believing the weather report these days.<\/p>\n<p>Right now, we\u2019re in lock down here in the Midwest as a huge storm (what has been called a \u201cdeath storm\u201d on NPR) pushes its way across the country.\u00a0 The last big storm turned out to be a false alarm, but that wasn\u2019t &#8220;the storm of the century,&#8221; was it?\u00a0 Nevertheless, since I\u2019m from California and barely know how to drive in rain, I\u2019m waiting this one out at home.<\/p>\n<p>What does this have to do with soup?\u00a0 It comes down to trust.<\/p>\n<p>Just as you only believe information that comes from a source you find credible (be it the <em>Wall Street Journal<\/em>, the <em>New York Times <\/em>or cable TV), the only way to get food you can trust is to find a supplier you believe in.<\/p>\n<p>Consider the Carrot Ginger Soup my eldest has loved for several years.\u00a0 It comes in a box from Trader Joe\u2019s, which, since I hail from the left side of the country, I tend to trust implicitly.\u00a0 Although, now that I think of it, isn\u2019t Trader Joe\u2019s now owned by the same guys who own Aldi Foods, that market I used to avoid during my time in Berlin.<\/p>\n<p>Never mind.<\/p>\n<p>I\u2019ll just make the soup myself.<\/p>\n<p>It\u2019s easy, really. Carrots, onions, ginger and garlic are not only easily had any time of year, they\u2019re also downright cheap.\u00a0 And what\u2019s more, because I\u2019m doing the cooking, I\u2019ll know about everything that goes into the soup.\u00a0 Unless, of course, my rightwing offspring or leftie spouse try something \u201csoupy\u201d behind my back.<\/p>\n<p>Nah.<\/p>\n<p>Happily, the result of all this paranoia was a delicious soup that was roundly praised by the whole family. \u00a0Actually my kids thought it tasted great, but that it was a little thick (as noted in recipe below).<\/p>\n<p>See?\u00a0 It pays not to trust anyone.<\/p>\n<p>Except my grocer.\u00a0 It\u2019s not like I\u2019m actually going to grow any of this stuff.<\/p>\n<p>Yet.<\/p>\n<p><strong>Carrot &amp; Ginger Soup<br \/>\n<\/strong>(serves 6-8)<br \/>\n1 T canola oil<br \/>\n1 medium onion, chopped<br \/>\n1 T fresh ginger, minced<br \/>\n2 cloves garlic, minced<br \/>\n2 lbs carrots, chopped<br \/>\n5-6 cups stock<br \/>\nsalt &amp; pepper to taste<\/p>\n<ol>\n<li>Heat the oil over medium heat in a 3 quart soup pot, add the onions and saut\u00e9 until tender then add ginger and garlic and saut\u00e9 1-2 minutes more.<\/li>\n<li>Before the garlic burns, add the carrots, stock and seasoning and bring the mixture to a boil then reduce it to a simmer for 30-45 minutes.<\/li>\n<li>Puree the soup with an immersion blender until it has a smooth velvety texture.\u00a0 If it\u2019s too thick for you, add more stock and puree again until it reaches your preferred consistency.\u00a0 I started with 4 cups of stock to start and added an extra cup at the end because the puree was too thick for me. My kids thought it could have used one cup more (hence the 6 cups option).<\/li>\n<li>Serve warm with a lighter fish or a chicken dish.\u00a0 Crusty bread, as ever, is also a good companion.<\/li>\n<\/ol>\n<p><em>Image Credit: <\/em>\u201cWhen Life Gives You Snowmen\u2026\u201d\u00a0 Yes, the face is made of ginger, carrots and garlic (the onion is on the inner layer). You can, however, trust Trader Joe\u2019s. I know one of the mucky mucks over there.\u00a0 He\u2019s a good guy, a tad conservative, but still.
